Celebrate Durja Puja with these tasty treats

Durga Puja is celebrated with joy all over India, especially in West Bengal.
Singing, dancing, eating sweets & showing happiness are an integral part of the Durga Festival. Here are recipes for two of the most popular sweet dishes. Enjoy!



How to make Sandesh


Ingredients

  • 225 gms Paneer
  • 150 gms sugar
  • 1 tbsp rose water
  • 1/2 tsp ground green cardamom seeds
  • 10 pistachios thinly sliced and crushed



Combine the sugar and paneer and mix well. Place the mixture over heat and stir constantly to avoid lumps. When the mixture solidifies, splash the rose water on it and remove the pan from the heat. Stir a few more times.


Place the cardamom and pistachios on two separate plates. Divide the mixture into several portions and flatten them to give the desired shapes. Dip each piece into the cardamom and pistachios so that the front of the sandesh is coated with crumbs.


Best served cold.



How to make Rassagulla


Ingredients

  • 1/2 litre milk
  • 2 tsp. flour
  • 1/4 tsp lemon juice
  • 1 cup sugar
  • 1 cup water
  • 4-5 drops rose water



Heat milk in a pan and bring it to boil. Add lemon juice. Stir slowly and gently until white curd forms on the surface. Wash chenna (the curd that is obtained on straining the milk) under cold running water and twist the cloth that was used for straining to take out water.



Knead chenna to make smooth dough. Make small balls of equal size of the dough and set aside. Mix sugar and water in a saucepan and bring it to boil. Add chenna balls to the syrup and cook for 15 minutes with lid partly covered. The chenna dumplings will puff up. After cooling, sprinkle with rose water.
